Why is the Pomodoro break five minutes?

Long enough to stand, stretch and look away from the screen, short enough that you do not lose the thread of the task. Francesco Cirillo set it with a kitchen timer in the late 1980s and the ratio stuck because it holds up across most kinds of work.

Does the timer keep running if I close the tab?

No. Closing the tab ends the countdown. Switching to another tab or another window is fine, because the timer reads the clock rather than counting frames, so it stays accurate while hidden.
